Blueberry and Jalapeno Bagels

Total Time : 3hrs 45 mins

Bagels are perfect for a quick morning breakfast and my family especially enjoys fresh blueberry or jalapeno bagels. Eat them with or without cream cheese but nothing to beat this home made made bagel. Checkout the recipe.


Ingredients for bagel dough:

  • 1 and 1/4 cup warm water

  • 2 1/4 tsp dry yeast

  • 3 tablespoons castor sugar

  • 2 tablespoons vegetable oil

  • 5 cups all purpose flour

  • 1 cup fresh and 1 cup dried blueberries or 1 -2 minced jalapeno and 1/2 cup cheddar cheese

  • 1/2 tsp salt

  • 4 quarts of water

  • 2 tablespoon cornmeal

  • 1 egg for egg wash

Steps:

  • Add sugar , salt and vegetable oil to the luke warm water

  • Add yeast to it and let is sit for 10-12 mins

  • Once yeast is frothy for blueberry bagels add the dried and fresh blueberries

  • If making jalapeno bagels add 1-2 minced jalapenos and add cheese after kneading for 8-10 mins and again knead for 2-5 mins

  • Fold in the flour one cup at a time and knead to create a dough

  • Knead the dough for 10-15 mins

  • Cover the dough and let it rise in a warm space for 2 hours till its doubled in size

  • After 2 hours punch down the dough and divide into twelve pieces

  • Create a ball with each dough such that it is smooth

  • Repeat for other 11 dough balls

  • Let the pieces rest covered for 15 minutes

  • In the meantime put 4 quarts of water in a pot and wait for it to boil and also preheat the oven for 425 degrees F

  • Line a baking tray with parchment paper and sprinkle with cornmeal

  • After 15 mins oke a 2" hole in the middle to give it a bagel like appearance

  • Now add 3-4 bagels at a time to boiling water making sure that there is enough room in the pot

  • Boil 1-2 mins on each side and then place the boiled bagels on the baking tray

  • Brush all the tops of the boiled bagels with egg wash

  • Bake in preheated oven for 15-20 mins

  • After removing from the oven leave on wire rack for 10-15 mins

  • Let cool completely

  • Makes 12 bagels

Challah

Total Time : 3hrs 45 mins

Challah is a Jewish enriched dough bread that can be made plain or sweet. The braiding makes the bread magical.

You can braid with 3, 4 or even 8 braids. I have currently only tried 3 strand braids. I will try the others and upload pictures.


Ingredients:

  • 2 and 1/2 cup warm water

  • 1/2 cup honey

  • 2 1/4 tsp dry yeast

  • 4 tablespoons vegetable oil

  • 2 eggs

  • 8 cups all purpose flour

  • 1 cup golden raisins (optional)

  • 1 tablespoon poppy seeds (optional)

  • 2 tablespoon milk

  • 1/2 tsp salt

Steps:

  • Add honey , salt and vegetable oil to the luke warm water

  • Add yeast to it and let is sit for 10-12 mins

  • Once yeast is frothy add beaten eggs and raisins

  • Fold in the flour one cup at a time and knead to create a dough

  • Cover the dough and let it rise in a warm space for 1 and 1/2 hours till its doubled in size

  • After 1 and 1/2 hours punch down the dough and divide into two halves

  • Knead each half for 5-10 mins till the dough is elastic

  • Take each half and split into 3 equal parts

  • Form each third into a long rope/snake

  • Pinch one end of the 3 ropes together and braid them

  • Once you reach the end, pinch the remaining ends of the ropes

  • Preheat oven to 375 deg F

  • Grease 2 baking trays and place each loaf i each tray and cover with a warm towel and let it rise for an hour

  • After an hour brush the top of each loaf with milk and sprinkle with poppy seeds

  • Bake the loaves for 40 mins

  • After removing from the oven leave on wire rack for 10-15 mins

  • Let cool completely before slicing

  • Makes 2 loaves

Chelsea Buns

Total Time : 2hrs 55 mins

Chelsea buns are traditional British buns that are made with yeast dough and topped with Sultanas (golden raisins) , brown sugar and butter. They look similar to cinnamon rolls but dont necessarily have to have cinnamon in them. They are often glazed with apricot jam.

Ingredients -for dough:

  • 1 cup whole milk

  • 1/4 cup butter

  • 2 1/4 tsp dry yeast

  • 1/3 cup caster sugar

  • Grated zest of one large orange

  • 2 eggs

  • 4 cups all purpose flour

  • 1 tsp orange extract

  • 1 tsp salt

  • 1tsp ground cinnamon

Ingredients -for filling:

  • 1 cup golden raisins/dried apricots

  • 1 cup caster sugar

  • 1/2 cup of brown sugar

  • 1 tsp cinnamon

  • 1 tsp orange zest

  • 1/4 cup butter melted

Steps:

  • Warm milk in a saucepan and add butter till fully melted

  • Let it cool till its luke warm

  • Add sugar, salt and yeast and let it sit for 10-12 mins till frothy

  • Add in the beaten eggs and zest of one large orange and orange extract

  • Add in the cinnamon and flour one cup at a time till it forms a dough

  • Knead well and keep it covered in a warm place for an hour till its doubled in size

  • After an hour punch down the dough and knead well for 5-10 mins

  • Roll the dough into a square of 10"x 12"

  • Brush the melted butter for the filling on the dough

  • Mix the caster sugar, brown sugar, orange zest and cinnamon

  • Spread the mixture over the dough

  • Sprinkle with golden raisins, if using apricots put apricots in 2 cups hot water for 10 mins , drain the water, pat dry and then sprinkle the apricots

  • Roll the dough into a log and cut into 12 equal parts

  • Place the cut pieces, cut size up into a slightly greased pan or on a pan covered with parchment paper

  • Cover and let it sit for an hour

  • Preheat oven to 375 deg F

  • Brush the risen rolls with milk or butter

  • Bake for 20-25 mins

  • Let it cool on a wire rack for 10-15 mins

  • Brush with apricot jam and serve

Cinnamon Swirl Bread

Total Time :3 hours

Bake Time : 30-35 mins

  • Repeat with the other dough piece

  • Cover and let it sit for an hour

  • Preheat oven to 350 deg F

  • Brush the risen rolls with milk or butter

  • Bake for 30-35 mins

  • Let it cool on a wire rack for 10-15 mins

Dinner Rolls

Total Time : 2hrs 30 mins

My own take on dinner rolls ๐Ÿ˜Š

Ingredients for loaf:

  • 1 cup warm milk

  • 2 tablespoons caster sugar

  • 2 and 1/4 tsp dry yeast

  • 3 tbsp oil (olive/avocado)

  • 1 tsp salt

  • 1 large egg

  • 3 cup all purpose/bread flour ( for healthier verion add 1/2 cup bread flour, 1/2 cup of almond flour, 3/4 cup oatmeal flour and 1/4 cup tapioca flowr)

  • 1 tbsp softened melted butter for brushing

  • 1tsp sesame seeds for garnish(optional)

Steps:

  • Add oil, warm milk, salt and sugar to a bowl.

  • Add yeast and let is sit for 10-12 mins till frothy

  • Add the beaten egg

  • Add the all purpose/bread flour and knead to make a dough

  • Knead well for 5-10 mins

  • Keep it covered in warm place to rise till its double - approx 1 hour

  • After an hour punch down the dough and knead for a few more mins

  • Now roll the dough into a long log and cut into 10 equal pieces.

  • Shape each piece into a sphere and add to a baking tray

  • Let is rise for 20-30 mins . Brush the buns with butter before baking(you can garnish with sesame seeds if you want)

  • Bake for 22-25 mins in a preheated oven at 350 degrees F

  • After removing from the oven leave on wire rack for 10-15 mins

Dinner Rolls- Whole Wheat, Oat, Almond Flour

Total Time : 2hrs 30 mins

Ingredients for loaf:

  • 1 and 1/2 cup warm water

  • Bake for 20-22 mins in a preheated oven at 400 degrees F

  • After removing from the oven leave on wire rack for 10-15 mins

Growing up in Bombay we always ate pav's, with pav bhaji, masala pav, maska pav or vada pav. Don't get pav's in the US so have to improvise ๐Ÿ˜Š

Ingredients for Dough:

  • 1 and 1/2 cup warm water

  • 2 tablespoons caster sugar

  • 2 and 1/4 tsp dry yeast

  • 1 tsp garlic salt

  • 3 tbsp olive/avocado oil

  • 3 and 1/2 cup all purpose/bread flour

Ingredients for Seasoning:

  • 1/2 cup olive oil/butter

  • 1 tsp Italian seasoning

  • 3 cloves of garlic

Steps:

  • Add oil/butter, italian seasoning to a bowl. Crush the garlic and add to the bowl

  • Microwave for 30 sec or till oil is fragrant. You can also heat up the oil on a stove top

  • Add sugar, salt, 3 tbsp olive oil and luke warm water in a bowl and add yeast to it

  • Let is sit for 10-12 mins till frothy

  • Add the all purpose/bread flour and knead to make a dough

  • Knead well for 5-10 mins

  • Keep it covered in warm place to rise till its double - approx 1 hour

  • After an hour punch down the dough and knead for a few more mins

  • Roll into a log and cut into 12 equal pieces

  • Now take each piece and roll into a log rope

  • Shape in the form of a knot

  • Let them rise in a baking tray for another 30 mins

  • Brush half the oil/butter mixture on the dough

  • Bake for 22-25 mins in a preheated oven at 350 degrees F

  • After removing from the oven, brush with remaining oil/butter mixture leave on wire rack for 10-15 mins

Enjoy with a cup of coffee or tea!

Focaccia

Total Time : 2hrs 30 mins

  • Spread the remaining oil mixture on the dough

  • Bake for 20-22 mins in a preheated oven at 400 degrees F

  • After removing from the oven leave on wire rack for 10-15 mins

Multigrain Bread

Total Time : 3hrs 30 mins

Try this home made multigrain bread opposed to the store bought ones. Nothing beats the smell of fresh bread baking in the oven ๐Ÿ˜Š

Ingredients for loaf:

  • 2 cups boiling water

  • 1/2 cup 7/10 grain hot cereal mix

  • 1/2 cup chopped nuts + some chopped pumpkin seeds

  • 4 tbsp butter at room temp

  • 2 tablespoons caster sugar

  • 2 1/4tsp dry yeast

  • 1 egg

  • 2-3 tablespoons vegetable/olive oil

  • 4 + cups all purpose flour

  • 1 tsp salt


Steps:

  • Add 2 cups boiling water into the 7/10 grain cereal mix , add butter in it so it melts as well and let it sit till its lukewarm in temp

  • Add sugar, salt and crushed nuts to the mixture above and add yeast to it

  • Let is sit for 10-12 mins till frothy

  • Slowly add the all purpose flour and knead to form a dough

  • Knead well for 5-10 mins and let it rise in a warm place till its doubled in size approximately an hour

  • After an hour punch down the dough and knead for a few more mins

  • Divide into two , knead well and shape based on loaf pan you are planning to use

  • Put it in either 2 greased 8x4 loaf pans or one 9x5 loaf pan

  • Keep covered and let it rise for another hour mins till doubled in size

  • In the meantime preheat oven to 350 degrees F

  • After the bread has doubled brush them with butter

  • Bake for 25-30 mins

  • After removing from the oven leave on wire rack for 10-15 mins

Pane Bianco

I have been looking for recipes with bread to make life in the pandemic interesting and also give something different to the kids. Love anything with cheese and it sure looks fancy ๐Ÿ˜Š

Ingredients for loaf:

  • 1 cup milk

  • 2 tablespoons caster sugar

  • 2 1/4tsp dry yeast

  • 1 egg

  • 2-3 tablespoons vegetable/olive oil

  • 3 + cups all purpose flour

  • 2 tsp garlic salt

  • 2 tbsp Italian seasoning

  • 1 cup shredded mozarella

  • 1 cup olives

  • 1/2 cup sundried tomatoes

  • 1/4 cup basil leaves

  • 1 medium sized jalapeno

Steps:

  • Add sugar, salt , oil and luke warm milk in a bowl and add yeast to it

  • Let is sit for 10-12 mins till frothy

  • Beat an egg and add it to yeast mixture

  • Add italian seasoning to the mixture

  • Slowly add the all purpose flour and knead the dough

  • Knead well for 5-10 mins

  • In the meantime 1 cup of olives and some sundried tomatoes in olive oil , jalapenos and some basil

  • Keep it covered in warm place to rise till its double - approx 1 hour

  • After an hour punch down the dough and knead for a few more mins

  • Roll the dough into a 8"x20" rectangle

  • Add the cheese followed by all the cut toppings spreading them evenly

  • Roll the rectangle , cut from the top and shape into shape of a S

  • Keep covered and let it rise for another hour mins till doubled in size

  • In the meantime preheat oven to 350 degrees F

  • After the bread has doubled brush them with butter

  • Bake for 25-30 mins

  • After removing from the oven leave on wire rack for 10-15 mins

  • After an hour punch down the dough and knead for a few more mins

  • Roll the dough into a log and break into 12 equal pieces

  • Shape in the shape of a pav or bun and put them in a well greased tray

  • Keep covered and let it rise for another 30-40 mins till doubled in size

  • In the meantime preheat oven to 350 degrees F

  • After the pavs have doubled brush them with butter

  • Bake for 10-12 mins

  • After removing from the oven leave on wire rack for 10-15 mins

Pesto Babka

I love Pesto and who doesn't love bread. Decided to try a braided Pesto bread after getting inspired by "The Great British Baking Show" Babka style. Its a hit so I guess I will be making this often ๐Ÿ˜Š

Ingredients for loaf:

  • 1 and 1/4 cup warm water

  • 2 tablespoons caster sugar

  • 2 1/4 tsp dry yeast

  • 4 tablespoons vegetable/olive oil

  • 3 and 1/2 cups all purpose flour (for healthier version - 1 cup oatmeal flour, 1/2 cup almond flour, 1/4 cup tapioca flour , 2 cup bread flour)

  • 1 tsp salt or 1 tsp garlic salt

  • 2 tbsp Parmesan cheese

Ingredients for Pesto:

  • 2 cups packed basil

  • 2 garlic cloves

  • 1/2 cup Parmesan cheese

  • 3/4 tablespoons olive oil

Steps:

  • Add sugar , salt/garlic salt and vegetable/olive oil to the luke warm water

  • Add yeast to it and let is sit for 10-12 mins

  • Once yeast is frothy fold in the flour one cup at a time and knead to create a dough

  • Cover the dough and let it rise in a warm space for 1 and 1/2 hours till its doubled in size

  • In the meantime prepare the pesto - add basil, garlic , cheese to a food processor, drizzle olive oil slowly while running on low speed ( you can also use store bough pesto)

  • After 1 and 1/2 hours punch down the dough

  • Knead for 5-10 mins till the dough is elastic

  • Spread the dough into a 9 inch x 20 inch rectangle

  • Spread pesto about 1/2 inch from the ends

  • Roll the dough into a log pinching the ends

  • Cut the dough down the middle from end to end

  • Braid the dough and transfer to two greased 8x4 loaf pans

  • Let it rise for 1 hour, sprinkle with Parmesan cheese

  • In the meantime preheat oven to 350 degrees F

  • Bake for 40 mins

  • After removing from the oven leave on wire rack for 10-15 mins

  • Let cool completely before slicing

  • Makes 2 babka's

Pizza

Nothing to beat homemade pizza dough ๐Ÿ˜Š

Ingredients:

  • 1 and 1/4 cup warm water

  • 2 tablespoons caster sugar

  • 2 1/4 tsp dry yeast

  • 4 tablespoons vegetable/olive oil

  • 2 tbsp italian seasoning

  • 3 and 1/2 cups all purpose/bread flour

  • 1 tsp salt or 1 tsp garlic salt

  • 2 cup Mozarella cheese

  • 1 cup pizza sauce

  • Pizza toppings - 1 can pineapple pieces, olive can - or any toppings of your choice


Steps:

  • Add sugar, salt/garlic salt, italian seasoning and vegetable/olive oil to the luke warm water

  • Add yeast to it and let is sit for 10-12 mins

  • Once yeast is frothy fold in the flour one cup at a time and knead to create a dough

  • Cover the dough and let it rise in a warm space for 1 and 1/2 hours till its doubled in size

  • Cut the olive into smaller pieces

  • Drain the pineapple juice and set aside

  • Heat the oven to 400 deg F and keep the pizza stone inside on top rack so it heats well

  • In about 30 min start preparing the pizza

  • Divide the dough equally and roll into a circle

  • Now take out the pizza stone, put some dry flour on it and then place your pizza based on it

  • Put 1 tbsp of oil and spread over it

  • Add half the pizza sauce followed by half the cheese and half the toppings

  • Bake for 12-14 mins

  • Repeat for the second pizza

  • After removing from the oven leave for 5 mins before cutting the pizza

  • Makes 2 pizza's

Saffron Twist aka Lussebullar/Lussekatter

Total Time : 2hrs 20 mins

I ate some saffron twists in a local bakery in San Jose, CA and thus began my quest for finding the recipe for these. Upon researching I found that these are actually based on the Swedish Lussebullar/Lussekatter buns which are baked around Christmas however I really liked the braided appearance at my local bakery so I decided to keep the look. They were a hit in my house so try and let me know what you think ๐Ÿ˜Š.

Ingredients:

  • 2 cups warm milk

  • 1 cup sugar

  • 3 and 1/2 tsp dry yeast

  • 7 cups all purpose flour

  • 3/4 cups unsalted butter

  • 1 tbsp saffron strands

  • 1 cup raisins

  • 1/4 tsp salt

  • 1/4 cup water

  • 1/2 cup sliced almonds for garnish

  • 1 egg

Steps:

  • Add saffron in 1/4 cup hot water and let is sit for 10 mins

  • Heat milk in a sauce pan till warm, add butter and sugar allow to melt and let is cool

  • Add yeast to the milk mixture and let is sit for 10-12 mins till its frothy

  • Add raisins and saffron strands to the milk mixture

  • Add flour 1 cup at a time till you form a dough

  • Keep the dough covered and let it rise for 1hour till about doubled in size

  • Punch down the dough and knead for 5-10 mins

  • Split the dough into 10 equal parts

  • Each part is to be further divided into 3 equal parts

  • Roll each of the 3 sections into along rope

  • Take one end of the ropes and pinch them together

  • Braid the ropes and pinch the other end

  • Repeat for all the other 9 dough parts

  • Transfer the braided rolls onto a silicone sheet or parchment paper , cover it and let is rise for 30 minutes

  • In the meantime preheat the oven to 400 degrees F

  • After 30 mins beat the egg and brush the top of the rolls with egg and cover with sliced almonds

  • Bake for 10-12 mins

  • After removing from the oven leave on wire rack for 10-15 mins

  • Let cool completely and enjoy with a cup of coffee, tea or hot chocolate

Tutti-Frutti Bread/Buns

Bake Time : 30-35 mins

Prep Time : 20mins

Cool Time : 10-15 mins

Anyone from India loves Tutti-Frutti bread. Growing up in Bombay my dad would sometimes buy the Wibs Tutti-Frutti on the way back from his morning walk as a special treat. After moving to the US I missed this bread and searched high and low for a recipe. I looked up a few recipes and mixed and matched and made my own. Do try and let me know if its close to your memory of tutti-frutti bread ? ๐Ÿ˜Š

Ingredients:

  • 1and 1/4cup warm milk

  • 1/2 cup sugar

  • 2 tsp dry yeast

  • 3 cups all purpose flour /maida or bread flour

  • 4 tablespoon butter

  • 1 tsp vanilla extract

  • 1 cup tutti-fruitti

  • 1/4 tsp salt

Steps:

  • Heat milk in a sauce pan till warm, add butter and sugar allow to melt and let is cool

  • Add yeast and let it stand for 10-12 mins till yeast is frothy

  • Add flour and salt in a bowl and mix well.

  • Add tutti-frutti to the wet mixture.

  • Add dry mixture to the wet mixture and knead into a dough

  • Oil a bowl and put the dough in the bowl, cover with a lid and keep in a warm place for about an hour till about doubled in size

  • After an hour punch the dough down and knead well for about 5 mins

  • Grease one 8x5 loaf pan and set aside

  • Spread the dough into a rectangle and put into greased loaf pan

  • Cover and let it rise for another 30 mins

  • Preheat oven to 375 degrees F

  • Brush the top with milk and let it bake for 30-35 mins

  • After removing from the oven leave on wire rack for 10-15 mins

  • Let cool completely before slicing

  • Alternately you can roll the dough after the first rising in the shape of a log

  • Cut the log into 12 equal pieces.

  • Make them into rounds and let them rise in a 12x5 pan for 30 mins

  • After the second rise brush the buns with melted butter

  • Bake for 22-25 mins
