Ingredients:

  • 3 eggs

    • 1/2 cup milk

    • 1 cup almond flour

    • 1/2 cup oat flour

    • 1/4 cup sabudana flour

    • 6 tsp sugar

    • 1 tsp vanilla essence

    • Butter/Oil for cooking

    • Whipped cream for serving

    • Strawberries/Blueberries for serving

Steps:

  • Add eggs, milk, sugar, vanilla essence in a stand mixer and beat till nice and frothy

  • Add flour to the mixture and combine well.

  • Oil waffle iron and pour mixture

  • Serve with fresh strawberries, blueberries and whipped cream

  • Makes 5-6 waffles

Steps:

  • Add eggs, milk, sugar, vanilla essence in a stand mixer and beat till nice and frothy

  • Add flour to the mixture and combine well.

  • In a large pan add some butter/Oil and heat it

  • Now add some of the mixture in the middle and rotate the pan till the mixture is spread to the end of the pan

  • Cook on the side till light brown

  • Add some oil/Butter and then flip the crepe to the other side

  • Cook for another minute

  • Remove from stove

  • Serve with fresh strawberries, blueberries and whipped cream

  • Makes 10-12 crepe's

French Toast

Mom makes awesome french toasts and these were made by her on special occasions. Love them 😊


Ingredients:

  • 2 eggs

    • 2 cup milk

    • 1/2 cup sugar

    • 1 tsp vanilla essence

    • Butter/Oil for cooking

    • Whipped cream for serving

    • Strawberries/Blueberries for serving

    • 8-10 slices of bread

Steps:

  • Beat eggs, milk, sugar and vanilla essence at medium heat in a stand in mixer till frothy

    • Add oil/butter to a pan and wait for it to heat

    • Take a slice of bread . Dip in the egg, milk mixture and put it in the pan

    • After its cooked for 2-3 mins, flip and cook the other side

    • Remove from sauce pan

    • Serve with whipped cream and fresh fruits

    • Add maple syrup if you want it to be more sweet

Idli's

Total Time : 1 day

Cook Time : 10-15 mins

Nothing like fresh idli's in the morning with chutney, podi or sambhar! My kids love them. Cant compare with the idlis my mother in law made but I try! 😊.


Ingredients:

  • 2 cups rice ( traditionally idli rice is used but I use basmati rice and the result is the same )

  • 1 cup white urad dal (whole or cut)

  • 5-6 tbsp salt

  • water to grind

Steps:

  • Wash the rice and urad dal well and soak them separately in two different vessels overnight

  • In the morning grind the rice in a blender with to a coarse consistency and put in a vessel

  • Now grind the urad dal to a fine consistency and add to the rice mixture

  • Add salt and mix well

  • Transfer into smaller containers and set aside to ferment

  • When its cold I put them in the oven and just turn on the light

  • After 8-10 hours you will notice bubbles and that the batter has risen

  • Remove from oven, mix well and keep in refrigerator

  • Next morning add few inches of water in a cooker and put it on the gas on high heat

  • Oil the idli pans and add batter

  • Add the pans to the cooker , close the lid (donot put the weight) and reduce the frame to medium once you steam coming out of the vent

  • Cook on medium heat for 10-12 mins

  • Let is sit in the cooker for 5-10 mins

  • Serve hot with sambhar, chutney or podi

Kande Pohe

Total Time : 20-30 mins

Ingredients:

  • 3 cups of thick poha

    • 2 tbsp lemon juice

    • 2 tsp salt

    • 8-10 curry leaves

    • 8-10 green chillies

    • 1 tsp jeera

    • 1 tsp mustard seeds +8-10 pieces of channa and urad dal

    • 1 cup peas

    • 1 small onion

    • handful of roasted peanuts

    • 2-3 tbsp of vegetable/olive oil

Steps:

    • Take the poha in a collander, wet it so its soft and drain the water

    • Add 1/4 tsp turmeric and , 1 tsp salt and lemon juice and mix with the wet poha

    • Cut the onions and green chillies

    • Put a saucepan on the gas on high heat

    • Add jeera and mustard seeds + dals to oil till it mustard splatters

    • Now add cut onions, green chillies and curry leaves

    • Roast till onions are golden brown.

    • Add the remaining salt and turmeric and stir for a a few seconds

    • Now add the peas, and cook for 10 mins on medium low heat till peas are cooked.

    • Now add the soaked poha and cover and leave on stove for 5 mins on low heat

    • Garnish with roasted peanuts and serve hot

Multigrain Rice Stick - Sevai

Total Time : 30-45 mins

Ingredients:

  • 1 bag of multigrain rice stick

  • 1 tsp lemon juice

  • 1 and 1/2 tsp salt

  • 1 tsp jeera

  • 1 tsp mustard seeds +some channa dal and urad dal

  • 8-10 green chillies

  • 8-10 curry leaves

  • 3 tsbsp vegetable/olive oil

  • 1 small onion

Steps

    • Mince onion, and chilies and set aside

    • Add lot of water in a 6 /8 quart vessel and bring to a boil

    • Once the water is boiling add 2 tbsp of salt and the rice stick and turn off the heat immediately

    • Keep rice stick in water for 2-3 mins and drain immediately. Run cold water over to make sure it doesnot overcook

    • Add jeera, mustard and the daal to pan with oil and wait till it splatters

    • Add the curry leaves, chilies and onion and fry till golden brown

    • Add salt and mix well

    • Add the rice drained rice stick and mix well.

    • Add the lemon juice and mix well. Turn off the stove

    • Enjoy with hot cup of tea or coffee!

Oatmeal Idiyappam

My mother-in-law used to make traditional rice idiyappam but I was looking for something more healthy . Try it you might like it 😊


Ingredients:

  • 2 cup of rolled oats

  • 2 tbsp rice flour

  • 2 cup +2 tbsp water

  • 1/2 tsp salt

  • 1 tsp vegetable oil

Steps

    • Grind the rolled oats into a fine powder. Pass through a sieve to make sure that there are no big pieces

    • Mix the rice flour and keep aside

    • Add the 2 cup +2tbsp water to a pot , add salt and oil

    • Bring to a boil,switch off the heat and add the oat+rice flour mixture to the boiled water

    • Mix well until it thickens, cover and set aside for 5 mins

    • Uncover, mix well and make sure there are no lumps

    • Divide into 4 pieces and roll each part into a cylinderical shape

    • Steam the cylindrical in a cooker or idli patra for 12-15 mins

    • Take the sevai mold, grease well and remove each cylinder and use the mold to make sevai when the dough is hot

  • 1 and 1/2 cup yogurt

  • 1 tsp salt

  • 1 tsp jeera

  • 1 tsp mustard seeds +some channa dal and urad dal

  • 8-10 green chillies

  • 8-10 curry leaves

  • 1/2 bunch corriander leaves

  • 1 tsp baking powder

  • 3 tsbsp vegetable/olive oil

  • 1/2 cup roasted cashews

Steps

    • Pan fry the rolled oats till fragrant

    • Let them cool and grind them finely in a blender

    • Add jeera, mustard and the daal to pan with oil and wait till it splatters

    • Finely mince the chilies and add the curry leaves till they fry

    • Add finely minced coriander leaves and roasted cashews and salt

    • Now add sooji and fry till its fragrant

    • Dont overfry else the color will change

    • Now add the rolled oats flour and fry for a few more mins

    • Take the mixture from the heat and add baking powder and yogurt for a idli like consistency

    • If required add more yogurt, dont add too much else the idlis will be sticky

    • Now get the idlis molds ready

    • Add water in a cooker for steaming and keep on high heat

    • Oil the molds and pour the batter into the molds

    • Put the molds in the cooker , close the lid but dont put the weight.

    • Steam on high for 10-12 mins

    • Once cooled , remove from mold and enjoy with coconut chutney

  • 1 cup frozen or fresh mixed vegetables (carrots, corn, peas and green beans)

  • 3 tsbsp vegetable/olive oil

  • 1/2 cup roasted cashews

  • 1/2 onion

  • 4 cloves garlic

  • 1/2 inch ginger

  • 2 tbsp grated coconut

Steps

    • Pan fry the rolled oats till fragrant and set aside

    • I cook the mixed vegetables in the microwave for 5 mins to save time on cooking you can cook on stove top as well

    • Finely mince the onions, ginger and garlic and green chillies

    • Add jeera, mustard and the daal to pan with oil and wait till it splatters

    • Add the onions, ginger, garlic, green chillies along with curry leaves and saute till golden brown

    • Add finely minced coriander leaves and roasted cashews and salt

    • Now add the cooked veggies and saute for a few mins, if you dont microwave the veggies you can add them here and then cook for 5-10mins till veggies are tender

    • Add 2 cups of water and let it come to a boil

    • Now add the roasted oats, let them come to a boil , after that cook on low heat for 4-5 mins

    • Gently stir making sure not to mash up the oats

    • After that add the grated coconut and keep on low heat for 1-2 mins

    • Serve hot

  • 1 small onion

Steps

    • Mince onion, and chilies and set aside

    • Add lot of water in a 6 /8 quart vessel and bring to a boil

    • Once the water is boiling add 2 tbsp of salt and the rice stick

    • Once cooked drain the water and keep rice stick aside. Make sure not to overcook

    • Cut the carrots into 1/2 inch pieces and cook the peas and carrots in microwave for 5 mins

    • You can also use frozen peas and carrot bag , in this case use 1 cup of peas and carrots and cook in microwave for 5 mins

    • Add jeera, mustard and the daal to pan with oil and wait till it splatters

    • Add the curry leaves, chilies and onion and fry till golden brown

    • Add salt and mix well

    • Now add microwaved veggies and stir for a couple of minutes.

    • You can also cook the veggies directly on the stove top till tender but in my opinion it takes too much time

    • Add the rice drained rice stick mix to cooked veggies and mix well.

    • Add the lemon juice and mix well. Turn off the stove

    • Enjoy with hot cup of tea or coffee!

Sabudane Ki Khichadi

Total Time : 30-45 mins

Cook Time : 15-20 mins

Prep Time : 5 mins

Cool Time : 10-15 mins


Love this khichadi whether its vrat or no vrat, very good for the tummy too 😊


Ingredients:

  • 2 cup sabudana

  • 5-6 green chilies

  • 10-12 curry leaves

  • 1 and 1/2 tsp salt

  • 1 tsp jeera

  • 1 tsp mustard with 8-10 pieces of urad and channa dal each

  • roasted peanuts- crushed and some whole

  • 2-3 tbsp vegetable oil

  • 2 potatoes

Steps:

  • Wash the sabudana well and remove all the starch, soak it in water for 6 hours , preferably overnight. Soak such that its just sitting in enough water to keep it wet.

  • Cut the green chillies

  • Cut 2 potatoes into 2 inch pieces and set aside

  • Add oil in a sauce pan and once it gets hot add the mustard, urad and channa dal, also add the jeera

  • Once it splatters add the green chillies and curry leaves.

  • Roast for a few minutes now and add the salt and mix well

  • Add the cut potatoes and let cook for 10 mins on low heat (cover the sauce pan)

  • Once nicely cooked add the soaked sabudana and mix well and cook for 2-3 mins.

  • Add the crushed peanuts and mix well , cook for another minute

  • Dont overcook else the sabudana will turn sticky

  • Turn off the stove and garnish will peanuts.

Steps

    • Finely mince onion, ginger , chilies and set aside

    • Mince coriander leaves and keep aside as well.

    • Add jeera, mustard and the dal to pan with oil and wait till it splatters

    • Add onions, chilies , ginger and the curry leaves and fry till golden brown

    • Add finely minced coriander leaves and roasted cashews and salt

    • Now add sooji and fry till its fragrant

    • Dont overfry else the color will change

    • Heat the water on the gas the add to the fried sooji mixture

    • Once it comes to a boil lower flame and let it cook till it comes together on low flames 5-10 mins

    • Mix well so that the upma comes together

    • Remove from flame and serve
