Bhel Puri is type of fast food we get on the roadsides in Bombay. Every bhelwaala has his own unique blend of delectable chutneys. Its a good snack when you are craving something savory and my kids love bhel. Hope that you enjoy it as well😊


Ingredients for tiki:

  • 5 potatoes

  • 2 pieces of bread

  • 1 tsp salt

  • 1/3 tsp red chilly powder

  • 1 tsp coriander powder

  • 1/2 tsp ginger powder

  • some cut coriander

  • 1 tsp of ammchur or chaat masala

  • 5-6 tbsp vegetable oil

Ingredients for yogurt mix:

  • 2 cup home made yogurt

  • 1/2 tsp salt

  • 1/4 tsp red chilly powder

  • 1 tsp fresh ground cumin powder

  • 1 tsp chaat masala

  • 2 tbsp sugar

  • Ingredients for garnish

  • Thin seva

  • 1/2 onion minced well

  • 1 tomato cut into small pieces

  • Some fresh coriander

Steps:

  • Boil the potatoes till tender ( I put in cooker for 1 whistle followed by keeping on low flame for 10 mins)

  • Skin the potatoes and mash them well making sure that there are no big pieces

  • Add all the spices

  • Cut the coriander finely , grind the bread slices in a food processor add to mixture

  • Mix everything well. Form them in shape show below

  • Shallow fry in a pan - this is much healthier than deep frying

  • Mix the ingredients for the yogurt and set aside. Keep the yogurt cold and adjust the spices as per taste

  • Take 2 tikis , put a good amount of yogurt mix

  • Add oil to a pan over medium heat and add 1 tsp of salt , 1/3 tsp of red chilly powder and turmeric power to it.

  • Roast the masalas for a minute then add the kurmura.

  • Dry roast the kurmura for 3-4 minute

  • Remove from heat

  • To this add 1 cup crushed papdi , sev, peanuts and boondi. Mix well

  • Boil potatoes , cut to small pieces, add salt, red chilly powder and chaat masala. Mix well

  • Cut some tomatoes and add salt and red chilly powder for taste and set aside

  • Now that we have the building blocks you can add them to your serving cup and enjoy!

  • Add the wet ingredients aka chutneys, tomatoes, potatoes and onions just before eating , else the bhel will lose its crunch

Dahi Bhalle(Vadas)

Dahi Bhalle are summer favorites in north India be it as a snack or as an appetizer especially in the summers. I have fond memories of mom making dahi bhalle , they were my papa's favorite. See if you like them😊. They are called Bhalle in the north and Vada's in maharashtra. They are different from the dahi vada's in south India.


Ingredients:

Ingredients:

    • Soak the urad dal overnight if cold, if its hot weather soak 4-5 hours before making them

    • If the urad dal ferments a lot it will soak up a lot of oil

    • Beat the dahi well and mix in all the spices and sugar.

    • Store in fridge till ready to add the bhalle

    • Drain water from soaked urads dal, just add enough to grind in a blender/food processor

    • Add the ginger and salt while grinding, it should be not too dry and not too watery

    • Add oil to a kadhai and set on gas on high heat

    • Make sure that the oil is hot before adding the ground urad batter to it

    • To make the vadas extra soft beat them in your stand mixer/ with hand mixer/food processor just before frying , this will make them very fluffy

    • After the vadas are fried, boil water in a container and add the vadas to it

    • The water will remove most of the oil in the vadas

    • Squeeze all the water out from the vadas and add them to prepared dahi just before serving

    • The vadas will soak up all the dahi so dont them too early

    • Garnish with mint and Imli ki chutney

Dahi Papdi Chat

Nothing to beat Dahi Papdi Chaat on a hot summer day when you are cravy something cooling and savory😊


Ingredients:

  • Beat dahi well for a couple of minutes

  • Add spices and sugar and mix well

  • Add roasted jeera and mix

  • Now boil potatoes, peel and mash them

  • Add the spices, mix well and set aside

  • Take 7 pooris in a plate

  • Break the tops and add some potatoes, and boondi

  • Top with dahi mixture and garnish with sev and chutneys

  • Make sure that the dahi is cold . It will be refreshing and savory

Savory Makhaane

Touted as health food by USDA, makhaane (fox-nuts, lotus seeds) are good for you . They are low in calories and high in protein and a cup of them can keep you feeling full longer and they make for an excellent snack😊


Ingredients:

  • 1 small pkt 100 grams of makhaane

  • 1 tsp jeera

  • 2 tbsp vegetable/olive oil

  • 1/2 tsp salt

  • 1/4 tsp turmeric powder

  • 1/4 tsp red chilly powder

  • 1 tsp chaat masala

Steps:

    • Dry roast the makaane in a big pot till they become crunchy and hard, just like popcorn

    • Add oil to a pot

    • Add jeera and cook till golden brown

    • Add the spices (except chaat masala) and cook for a few seconds

    • Add makhaane, mix well and make sure that the makhaane are coated with the spices

    • Turn off the heat and add the chaat masala and mix well

    • The makhaane can be a stored in a container for a couple of weeks.
