Ingredients for cake:

  • 2 cups almond flour

  • 1 egg

  • 1 tsp vanilla extract

  • 1/2 cup of caster sugar

  • 1 teaspoon baking powder

  • 3-4 tbsp cold milk

  • 1 cup blueberries

  • 1/4 tsp salt

Steps:

  • Preheat oven to 350 degrees F

  • Beat the egg well, add milk, vanilla essence and set aside

  • Add all the dry ingredients to a bowl and mix well, mix with the wet ingredients

  • Now add the blueberries

  • Make into a disk shape and cut into 8 pieces

  • Spread them out a bit so that they bake properly

  • Bake in oven for 20-22 minutes till toothpick comes out clean

  • After removing from the oven leave on wire rack for 10-15 mins

  • 1/4 cup caster sugar

Steps:

  • Preheat oven to 350 degrees F

  • Grease one 8x8 pans

  • Beat the eggs well

  • Add all the cake ingredients and mix well, add more milk if required to form cake batter

  • Batter should not be too runny or dry

  • Pour the batter onto the greased tray

  • Mix the streusel ingredients and layer them on the batter

  • Bake in oven for 30-35 minutes till toothpick comes out clean

  • After removing from the oven leave on wire rack for 10-15 mins

  • Let cool completely before slicing

  • Pour the batter onto the greased loaf pan

  • Bake in oven for 45-50 minutes till toothpick comes out clean

  • After removing from the oven leave on wire rack for 10-15 mins

  • 1/2 cup butter at room temperature

  • 1 and 3/4 cup of sugar

  • 2 cups crushed walnuts

  • 3/4 cup sour cream

  • 2 eggs

  • 3/4 cup orange juice

  • 2 tsp orange zest

  • 1/2 tsp salt

  • 2 teaspoons baking powder

  • 2 tsps vanilla extract

  • 3 cups all purpose flour

Steps:

  • Preheat oven to 375 degrees F

  • Grease two 9x5 loaf pans

  • Soak apricots in 4 cups hot water for 10mins

  • In the meantime cream sugar and butter in stand-in mixer for about 10mins till butter is fluffy

  • Add 2 eggs and continue beating for a few more minutes

  • Add sour cream and beat for another 2 mins

  • Add vanilla extract and orange zest

  • Now mix flour, salt and baking powder is another bowl and mix well so that the baking powder is combined well with the flour

  • Fold the flour in the butter mixture slowly, a little at a time alternating with the orange juice

  • Add drained apricots and crushed walnuts to mixture, donot overmix

  • Split the mixture into the two greased loafs pans

  • Bake for 40 mins, Insert toothpick and check that it is clean

  • 1 cup ghee

  • 1 1/2 cup sugar

  • 2 cups wheat flour

  • 1/2 cup besan

  • 4 tbsp sooji

  • 2 teaspoons baking powder

  • 2 tsps crushed green elaichi

  • 1/4 cup sliced almonds

Steps:

  • Preheat oven to 375 degrees F

  • Grease two sheet trays or add parchment paper on sheet trays and greaze it.

  • In the meantime cream sugar and ghee in stand-in mixer for about 10mins till it is fluffy

  • Now mix flour, besan, sooji and baking powder is another bowl and mix well so that they are combined well

  • Fold the flour in the ghee mixture slowly, a little at a time - donot overmix

  • Add crushed elaichi in the end

  • Mix till the everything comes together like dough

  • Scoop the mixture in a tbsp scoop , flatten it on top and put it on sheet tray to bake

  • You can garnish with sliced almonds

  • Bake in the oven for 10-12 mins

  • 1/4 cup luke warm water

  • 3/4 cup oil

  • 1 egg

  • 1/2 honey

  • 1 teaspoon baking powder

  • 1 tsp vanilla extract

  • 1+3/4 cups all-wheat flour

  • 1 cup chopped walnuts

  • 1 cup golden raisins

  • 1/4 tsp salt

Steps:

  • Preheat oven to 375 degrees F

  • Grease one 9x5 loaf pan

  • Mash the bananas , add oil , water, honey and beaten egg

  • Add vanilla extract to the wet ingredients

  • Add baking powder to the wheat flour and sift it

  • Add walnuts to food processor and pulse till finally chopped

  • Add walnuts and golden raisins to dry mix

  • Mix the dry ingredients to the wet ingredients making sure not to overmix

  • Pour mixture into the prepared loaf pan

Who doesn't love a good donut but they are packed with calories since they are deep fried so I was looking for a recipe which was healthier. Try this baked donut recipe, will satisfy your sugar craving for sure 😊

Ingredients for donut:

  • 2 table spoon unsalted butter at room temperature

  • 1/3 cup packed light brown sugar

  • 1 egg

  • 1 teaspoon baking powder

  • 1 tsp vanilla extract

  • 1 cup all purpose flour

  • 1/4 cup milk

  • 1/4 cup yogurt

  • 1/4 tsp salt

  • 1/2 tsp ground cinnamon

Ingredients for chocolate glaze :

  • 2 tablespoon unsalted butter

  • 1/4 cup whole milk

  • 4 oz semi sweet chocolate chips

  • Sprinkles

Steps:

  • Preheat oven to 350 degrees F

  • Grease the mini donut trays

  • Mix the dry ingredients i.e. flour , salt, cinnamon and baking powder in a bowl

  • Beat melted butter and sugar

  • Add egg and beat on low speed in a mixer

  • Add milk and yogurt and continue beating

  • Mix the wet and dry ingredients being careful not to overmix

  • Either spoon or pipe the batter into the prepared mini donut pans filling 2/3 of the tray

  • Bake for 10-12 mins until slightly browned

  • Transfer on wire rack and let it cool before glazing the donuts

  • To prepare the glaze add chocolate to heat proof bowl and set aside

  • Add milk and butter in a saucepan and heat till butter is melted

  • Add milk and butter mixture to the chocolate and mix till chocolate is fully melted

  • Glazed the cooled donuts in the chocolate glaze

  • Cover with sprinkles

  • Add the eggs one at a time and continue beating for a few more minutes

  • Add vanilla extract

  • Now mix flour , salt and baking powder is another bowl and mix well so that they are combined well

  • Add cocoa powder and mix again, If cocoa powder is lumpy , sift it through a sieve

  • Roast walnuts and then grind them coarsely in a food processor

  • Add walnuts into the flour butter mixture , add milk as required if the mixture is not of cake consistency

  • Mix well and add pour into prepared tray

  • Bake for 20-22 mins, make sure not to bake too long as the brownies will become dry

  • After baking let cool completely before cutting

  • Combine condensed milk, coconut and vanilla extract in a bowl and mix well

  • Beat the egg whites with salt till medium stiff peaks

  • Heat the chocolate chips and water over a double boiler until chocolate has fully melted

  • Set aside to cool till room temperature

  • Add vanilla extract

  • Now sift flour, salt and baking powder in another bowl and mix well so that they are combined well

Ingredients for Blueberry Jam:

  • 1 and 1/2cup fresh blueberries

  • 2 tsp sugar

  • 1 tsp lemon juice

Ingredients for Oatmeal Bar:

  • 2 and 1/2 cups plain quaker oats

  • 1/2 cup brown sugar

  • 1/4 tsp salt

  • 1/2 cup yogurt

  • 1/4 cup vegetable /olive oil

  • 1/2 teaspoons baking powder

  • 1 tsp vanilla extract

  • 1/4 tsp cinnamon powder

Steps:

  • Preheat oven to 325 degrees F

  • To prepare the jam- add blueberries, sugar and lemon juice in a saucepan over medium heat.

  • Let the blue berries cook down and mash them with a potato masher if you want to speed up the process

  • Once cooked set jam aside

  • Grease one 8x8 baking pan, or add parchment paper on sheet trays and grease them

  • Take 1 cup of oatmeal and grind in your blender till its a coarse flour

  • Combine the flour and rest of the oatmeal bar ingredients and mix well.

  • Keep 1/2 cup aside and add the remaining in the prepare sheet tray

  • Spread the jam on top of the oatmeal mixture and then add the remaining half of oatmeal that you saved on top of it.

  • Bake in preheated oven for 30 mins

  • After removing from oven, leave on wire rack for 10-15 mins

  • Let cool completely before cutting into 12 bars.

Oatmeal Cinnamon Bread

Total Time : 30-35 mins

Bake Time : 10-12 mins

Prep Time : 10mins

Cool Time : 10-15 mins

My healthy take on focaccia since too much of all purpose flour is not good for you 😊

Ingredients:

  • 2 plain quaker rolled oats

  • 1 cup buttermilk

  • 1 cup sugar

  • 1 egg

  • 1 tsp baking powder

  • 1/4 cup vegetable oil

  • 1/2 tsp salt

  • 1 tsp vanilla extract

  • 1 tsp ground cinnamon powder

Steps:

  • Preheat oven to 350 degrees F

  • Grease a 8x4 bread pan

  • Grind the oats in your grinder .

  • Mix in it 3/4 cup sugar and baking powder

  • Mix the buttermilk, egg, oil and vanilla together

  • Stir the remaining 1/4 cup sugar and cinnamon in another bowl and set aside

  • Now mix the oatmeal mixture with the wet ingredients

  • Pour half the mixture into the baking pan

  • Layer with 1/2 the cinnamon mixture

  • Use a knife or toothpick to swirl the cinnamon into the batter

  • Add the remaining oatmeal mixture

  • Layer with the remaining cinnamon mixture

  • Bake for the remaining 50-55 mins

  • Let cool on baking rack for 10-15 mins before removing from the bread pan

Oatmeal Focaccia

Total Time : 30-35 mins

Ingredients:

  • 2 and 1/2 cups plain quaker oats

  • 3/4 cup yogurt

  • 1 tbsp Italian seasoning

  • 4-5 cloves of garlic

  • 2 teaspoons baking powder

  • 1/2 cup oil

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • 2 tsp baking powder

Steps:

  • Preheat oven to 350 degrees F

  • Grease a 8x8 sheet trays

  • Add oil, 1/2 tsp salt, pepper , italian seasoning to a bowl. Crush the garlic and add to the bowl

  • Microwave for 30 sec or till oil is fragrant. You can also heat up the oil on a stove top

  • Grind the oats in your grinder

  • Mix the yogurt , half the oil and baking powder into the ground oats

  • Pour the mixture on a greased tray

  • Bake for 5 mins

  • Once the top starts to harden a bit take out of the oven and push down a little

  • Add the remaining of the oil mixture on top

  • Bake for the remaining 20-25 mins

  • Let cool on baking rack for 10-15 mins before cutting into 2 " squares

Oatmeal Raisin Cookies

Total Time : 30-35 mins

Nothing like these Oatmeal raisin cookies. The Almond flour gives a nice flavor. Healthier than chocolate chip and mouth watering delicious. 😊 You can alternately make them as thumb print cookies and put some jam in the center before baking.

Ingredients:

  • 2 cups plain quaker oats

  • 2 cups almond flour

  • 2 cups all purpose flour

  • 1 cup unsalted butter

  • 2 cups of sugar

  • 2 eggs

  • 2 teaspoons baking powder

  • 2 tsps vanilla extract

  • 2 cup raisins

  • 1/4 tsp salt

Steps:

  • Preheat oven to 375 degrees F

  • Grease two sheet trays, or add parchment paper on sheet trays and greaze them

  • Dry fry the oats on the stove for 5-10 mins till a little golden - let it cool and then grind them in your grinder till its coarse

  • Cream sugar and butter in stand-in mixer for about 10mins till butter is fluffy

  • Add the eggs one at a time and continue beating for a few more minutes

  • Add vanilla extract

  • Now mix flour, oatmeal flour, raisins, almond flour, salt and baking powder is another bowl and mix well so that they are combined well

  • Fold the flour in the butter mixture slowly, till it comes together forming a dough

  • Scoop the mixture using a tbsp and bake on sheet for 10-12 mins

  • After removing from oven, leave on wire rack for 10-15 mins

  • Let cool completely

Oatmeal Strawberry Snack Bars

Total Time : 30-35 mins

Bake Time : 10-12 mins

Prep Time : 10mins

Cool Time : 10-15 mins

This is very similar to the oatmeal blueberry squares however there is no need to make the jam :)


Ingredients for Oatmeal Bar:

  • 2 and 1/2 cups plain quaker oats

  • 1/2 cup brown sugar + 2 tbsp for strawberries

  • 1/4 tsp salt

  • 1/2 cup yogurt

  • 1/4 cup vegetable /olive oil

  • 1/2 teaspoons baking powder

  • 1 tsp vanilla extract

  • 1 cup strawberry hulled

  • 2 tbsp corn starch

  • 1/4 tsp cinnamon powder

  • 1/4 cup coconut flakes

Steps:

  • Preheat oven to 325 degrees F

  • Wash the strawberries, remove the stems and slice them

  • Add the 2 tbsp cornstarch and 2 tbsp of sugar, mix them and set aside

  • Grease one 8x8 baking pan, or add parchment paper on sheet trays and grease them

  • Take 1 cup of oatmeal and grind in your blender till its a coarse flour

  • Combine the flour and rest of the oatmeal bar ingredients and mix well.

  • Keep 1/2 cup aside and add the remaining in the prepare sheet tray

  • Layer the sliced strawberries on top, followed by coconut flakes

  • Spread the jam on top of the oatmeal mixture and then add the remaining half of oatmeal that you saved on top of it.

  • Bake in preheated oven for 30 mins

  • After removing from oven, leave on wire rack for 10-15 mins

  • Let cool completely before cutting into 12 bars.

Orange Chiffon Cake

Total Time : 1hour

Bake Time : 40-45 mins

Prep Time : 10mins

Cool Time : 10-15 mins

Orange chiffon cake is so fluffy and light. You can make it healthier with almond flour. 😊

Ingredients:

  • 1 and 1/2 cup cake flour (for healthier version 2 cups almond flour + 1/4 cup tapioca flour)

  • 1/2 cup caster sugar

  • 1 cup brown sugar

  • 4 eggs

  • 1 teaspoons baking powder

  • 1 tsp vanilla extract

  • 1/4 cup vegetable oil

  • 1/3 cup orange juice

  • 1 tsp orange zest

  • 1/4 tsp salt

Steps:

  • Preheat oven to 350 degrees F

  • Grease a cake pan or a bundt pan and cover with 1 tsp of sugar to prevent sticking

  • Separate the egg whites and yolks

  • Mix yolks with about 2 tbsp of sugar, oil

  • Add orange zest , orange juice, vanilla extract and mix well

  • Add cake flour(or lalmond flour and tapioca powder) and baking powder and mix well and set aside

  • Now in stand mixture - whip egg whites, when half way to medium peaks add sugar in three installments

  • Once the whites are whipped to medium peaks add the mixture to the yolk flour mixture in batches

  • Make sure not to over mix and deflate the whites

  • Once well mixed add the mixture to prepared cake/bundt pan

  • Bake for 40-45 mins till toothpick inserted comes out clean.
