Dosa's and Puda's

Adai(with white or brown rice)

While dosa's are very tasty they are not that healthy considering the amount of rice that goes into it. When looking for a crepe with more protein an adai is a good option๐Ÿ˜Š


Ingredients:

  • 2 cups of rice (brown or white, I just use basmati rice)

  • 1/2cup urad dal

  • 1/2 cup channa dal

  • 1/2 cup yellow moong dal

  • 1/2 cup toor dal

  • 4-5 tbsp salt

  • 5-7 dried red chillies

  • 2 tbsp flax seeds

  • 2 tbs chia seeds

Steps:

    • Rinse and soak the rice and dal's separately in water , making sure that there is enough water

    • Next morning drain the excess water and grind the dal's , red chillies flax seed and chia seeds till its fine - it grinds very well in a Vitamix

    • Next grind the rice with some water draining the excess . Grind the rice a little coarse

    • Mix the two and add the salt, Mix that well into the batter

    • The batter should be of pouring consistency

    • Keep in a warm place for 3-4 hours

    • Batter is ready

    • To make the adai's heat a thick iron tawa, make sure its prepared so it doesnt stick

    • Put some oil on it and wipe it away with bounty sheet

    • Once heated up take a ladle and pour the batter in the middle and start spreading the batter from the middle outwards

    • Keep spreading in circular motion clockwise till it is spread in a round shape and distributed evenly and very thin

    • When the adai is done on the bottom side its going to start leaving the bottom of the pan

    • Pour a couple of drops of vegetable oil on the side and top after

    • Gently flip, cook on the other side for a couple of minutes

Atte ka Puda

Total Time : 60 mins

Healthy puda options, eat for lunch or breakfast๐Ÿ˜Š


Ingredients:

  • 2 cup of whole wheat atta

  • few sprigs of coriander leaves

  • 2 green chilly

  • 1/8 of finely minced onion

  • 1/2 tsp of salt

  • 1/2 cup dahi

  • 1 small potato finely grated

  • 1/8 tsp turmeric powder

Steps:

    • Finely chop onions, and coriander and cut the green chilly

    • Grate the potato finely dont need to squeeze out the water

    • Beat the dahi well to remove lumps

    • Mix all the above ingredients and add water to make it a pouring consistency

    • Rest for atleast 30 mins before cooking

    • Pour on hot tawa or griddle and cook like a dosa

    • Enjoy with achaar or dal as breakfast or as lunch or dinner

Besan ka Puda

  • 1 cup of besan

  • few sprigs of coriander leaves

  • 1 green chilly

  • 1/8 of finely minced onion

  • 1/4 tsp of salt

Steps:

    • Finely chop onions, and coriander

    • Mix all the above ingredients and add water to make it a pouring consistency

    • Pour on hot tawa or griddle and cook like a dosa

    • Enjoy with achaar or dal as breakfast or as lunch or dinner

Who doesnt love a good masala dosa. Now you can make your own from scratch๐Ÿ˜Š


Ingredients:

  • 2 cups of rice (brown or white, I just use basmati rice)

    • Once the batter starts rising you can mix well and transfer to the fridge

  • 2 cups of atta

  • 3-4 tbsp sooji

  • 2 tbsp saunf

  • 1/4 cup sugar

  • 1/4 cup ground nuts (optional)

  • oil for cooking

Steps:

    • Add water to above ingredients (not including oil) and mix to a batter of pouring consistency

    • Cook on hot tawa just like dosa

    • Eat by itself or with kheer

Ingredients:

  • 2 cups of makki ka atta

  • 1 egg

  • 1 cup milk

  • 10-12 strands of saffron

  • 1/2 cup sugar

  • 1/4 cup ground nuts (optional)

  • oil for cooking

Steps:

    • Break the egg and beat well.

    • Add saffron to a few tbsp water and microwave on high for 30 seconds so it gives out color

    • Add makki ka atta milk and the other ingredients including saffron and mix well

    • Add water so that batter is a pouring consistency , making sure that there are no lumps

    • Cook on hot tawa just like dosa

    • Eat by itself or with kheer

Moong dal Pudas

Healthy dal pudas ๐Ÿ˜Š


Ingredients:

  • 1 cups of moong dal

  • 1/4 tsp salt

  • 1/4 tsp roasted jeera

  • 1/4 tsp turmeric powder

  • 1/4 onion finely minced

  • few sprigs of dhaniya

  • 1 tsp minced ginger

  • 1 green chilly

  • oil for cooking

Steps:

    • Wash moong dal well and soak in water for 3-4 hours

    • Drain water and grind well with minimal water in a grinder/vitamix

    • Mince onion, dhaniya and ginger

    • Mix in ground moong dal

    • Add salt, ground and roasted jeera, cut green chilly

    • Add water to the above ingredients (not including oil) and mix to a batter of pouring consistency

    • Let is rest for 15-20 mins

    • Cook on hot tawa just like dosa

    • Eat with achaar or with dal or sabzi
