Cobbler's and Pie's

Apple Pie

Indians love mangoes and there are so many varieties in India from the perfect alphonso to tota , banarasi, langda , daseri to name a few. Every mango in India has its unique taste. This pie is an ode to Mangoes. I have made this pie for friend/family get togethers as well as company get togethers and its always been a great hit. Its a no bake pie so it captures the freshness of the Mangoes and is pretty easy to make. You will love this pie !


Ingredients:

  • 2 cup Mango Pulp - I buy the mango pulp cans you can make your own when mangoes are in season

  • 1/2 cup water

  • 1 tablespoon gelatin - you can use i sachet of unflavored knox gelatin

  • 8oz Philadelphia cream cheese

  • 9" Graham Cracker Pie crust - available in any supermarket

  • Whipped Cream - to serve with

Steps:

  • Beat the cream cheese in a stand mixer or with a hand mixer

  • In the meantime heat 1/2 cup of water on the stove. Once it boils add the sachet of gelatin to the water and let it cool to room temperature

  • If you make fresh pulp you need to add sugar. If using sweetened mango pulp there is no need to add sugar

  • Add sweetened mango pulp and gelatin to the cream cheese mixer and whisk well

  • Pour the mixture of the 9" graham cracker pie crust , cover with saran wrap to prevent skin from forming

  • Keep in the fridge to cool and set for 5-6 hours. I usually keep it overnight for better results

  • Cut into slices and serve with whipped cream

Strawberry Crumble

Total Time : 1 hour

Bake Time : 30-40 mins

Prep Time : 10mins

Cool Time : 10- 15 mins


Enjoy the summer fruits with this strawberry crumble. Its really good and I dont feel guilty it since its mostly fruit.


Ingredients for Strawberry Filling:

  • 2 lb strawberries

  • 1/2 cup sugar

  • 3 tablespon cornstarch

  • 1 tsp vanilla extract

  • 2 tablespoon water

  • Whipped Cream /Ice cream - to serve with

Ingredients for Topping:

  • 3/4 cup rolled oats

  • 3/4 cup white flour

  • 3/4 cup light brown sugar

  • 1/2 cup butter

  • 1/4 tsp salt

  • 1/2 tsp cinnamon

Steps:

  • Preheat oven to 350 degrees F

  • Grease a pie dish with butter

  • In another bowl mix strawberries and sugar

  • Mix 3 tablespoon of cornstarch with water and pour on top of the strawberries

  • Add the vanilla extract

  • Mix well and pour the prepared strawberries in the greased pipe dish

  • Mix the rolled oats, brown sugar, salt and cinnamon and white flour in another bowl

  • Evenly spread the dry mixture on top of the strawberries

  • Now cut the butter into small pieces and distribute on top of the dry mixture

  • Bake in preheated oven for 30-40 mins till you see the strawberries bubbling

  • Remove from oven and let it stand for 10-15 mins

  • Serve with whipped cream or ice cream
