Brown Rice

Total Time : 30 mins

Cook Time : 10-12 mins

Prep Time : 5mins

Cool Time : 10-15 mins

Though white rice tastes amazing, brown basmati rice comes a close second. Eating it makes me feel I am eating something healthy ๐Ÿ˜Š


Ingredients:

  • 1 cup brown basmati rice

Steps (cook with starch removed):

  • Wash the rice well

  • Put the washed rice in a saucepan and add lot of water to it ( about 4 cups)

  • Place the pan on high heat till it comes to a boil

  • After that cook on medium heat for 15 mins

  • Turn off the stove and keep it for another 15 mins in the water because the rice will cook in

  • At this point remove the rice and drain the water

  • Let the rice sit in heat for a 5-10 minutes, this will cook the rice completely.

  • Serve with dal or sambhar

Carrot Pulao

Total Time : 30 mins

Cook Time : 10-12 mins

South India has lot of different rice dishes and coconut rice is one such recipe. Can be prepared fast and tastes awesome ๐Ÿ˜Š


Ingredients:

  • 1 cup basmati rice

  • 1/2 medium sized onion

  • 1 inch ginger piece

  • 1 tsp jeera

  • 1 tsp mustard seeds + a few chana and urad dal pieces

  • 4-5 green chilies

  • 8-10 curry leaves

  • 1 tsp salt

  • 1/4 cup golden raisins

  • 12-15 roasted cashews

  • 5-6 medium sized carrots

  • 1 cup frozen peas

  • 2 tbsp olive/vegetable oil

Steps (cook with starch removed):

  • Now wash the curry leaves and green chilies , cut the green chilies and set aside

  • Mince onion and ginger , mix with green chilies and curry leaves and set aside

  • Skin the carrots and grate them in the food processor

  • Add oil to a pan and keep on high heat

  • When it heats up add jeera and mustard + dal mix till it splatters

  • Now add curry leaves. green chilies, onion, ginger, and salt and let cook till golden brown

  • Add the carrots and peas and cook for 10-15 mins till tender

  • Add half the cashews and raisins and mix for a couple of mins

  • Add the rice, and mix well . Keep in low flame for 2-3 mins before serving

  • Garnish with rest of roasted cashews and serve with dahi or raita

Coconut Rice

Total Time : 30 mins

  • 1 tsp salt

  • 1 cup grated coconut (fresh/frozen)

  • 12-15 roasted cashews

  • 2 tbsp olive/vegetable oil

  • Now wash the curry leaves and green chilies , cut the green chilies and set aside

  • Add oil to a pan and keep on high heat

  • When it heats up add jeera and mustard + dal mix till it splatters

  • Now add curry leaves. green chilies, and salt and stir for a few seconds

  • Add half the cashews and fry them with the spices

  • If using frozen coconut defrost it a bit and add to the pan so it can be fried and water is removed

  • If using fresh coconut add with the rice

  • Add the rice, and mix well . Keep in low flame for 5 mins before serving

  • Garnish with rest of roasted cashews and serve with any vegetable

Curd Rice

Total Time : 30 mins

Cook Time : 10-12 mins

Prep Time : 5mins

Cool Time : 10-15 mins

In the south dinner/lunch is mostly finished with curd rice. Curd rice is also eaten in north India but I like the spicy and tangy flavor combination together when prepared this way ๐Ÿ˜Š


Ingredients:

  • 1 cup basmati rice

  • 1 tsp mustard seeds + a few chana and urad dal pieces

  • 2 green chilies

  • 8-10 curry leaves

  • 2 cups home made yogurt

  • 1 tsp salt

  • 1/2 cup grapes

  • 1/4 cup pomegranate seeds

  • 12-15 roasted cashews

  • 2 tbsp olive/vegetable oil

  • Now wash the curry leaves and green chilies , cut the green chilies and set aside

  • 4-5 cloves

  • 1/2 inch of ginger stem

  • 1 bunch of coriander leaves

  • 1 bunch mint leaves

  • 2 tsp salt

  • 1/2 cup grapes

  • 1/4 cup pomegranate seeds

  • 12-15 roasted cashews

  • 2 tbsp olive/vegetable oil

Ingredients:

  • 1 cup basmati rice

  • 1 tsp jeera

  • 1 tsp mustard seeds + a few chana and urad dal pieces

  • 2 green chilies

  • 8-10 curry leaves

  • 2 tbsp lemon juice

  • 1 tsp salt

  • 1/4 tsp turmeric powder

  • 1/8 cup roasted peanuts

  • 2 tbsp olive/vegetable oil

Meethe Peele Chawal

Ingredients:

  • 1 cup basmati rice

  • 3/4 cup caster sugar

  • few strands of saffron

  • 1/8 cup sliced almonds

  • 1/8 cup golden raisins

  • 3-4 green cardamom

  • 2 tbsp butter/ghee

Steps (cook with starch removed):

  • Add saffron to a few tablespoons of water and heat in microwave so that saffron gives out color

  • Peel and crush green cardamom and set aside

  • Take a sauce pan and add sugar with 1/4 cup water and stir till sugar totally dissolves . Cook for a couple of minutes till it thickens

  • Now add cooked rice, butter/ghee with saffron water ,almonds and golden raisins and mix well

  • Let is simmer on a low flame for a couple of mins till the sugar syrup is fully incorporated in the rice

  • Turn off the stove and add the crushed green cardamoms . Serve hot .

  • 1 tsp salt

  • 1/4 tsp turmeric powder

White Rice

Just the smell of cooked Basmati Rice is so appetiing. Eat with plain moong dal or rajma. It can be cooked the way I like it with the starch removed since it just adds extra calories or you can cook it with the starch. ๐Ÿ˜Š
